Gluten-free protein bagels – Easy gluten-free cottage cheese bagels.
These gluten-free protein bagels – or gluten-free cottage cheese bagels – are some of the easiest baking you can take on. The dough needs no proving, and the whole thing really takes no time at all. Perfect when you want home baking that is filling, high in protein and tastes great.
I make them by blitzing gluten-free oats into a fine flour and mixing it with baking powder and salt. Then I add cottage cheese and an egg, which bring both extra protein and a lovely moistness to the dough. Once the dough comes together, it is shaped into bagels and baked in the oven until golden – and that is really all there is to it.
When you bake with pure oats, bear in mind that the bagels will naturally taste of oats. Personally I think that is delicious, but you can easily experiment with other types of gluten-free flour and find your own favourite.
The result is slightly dense, moist and filling bagels that work perfectly for breakfast, in a packed lunch or as a protein-rich alternative to ordinary bread.
Gluten-free protein bagels – Gluten-free cottage cheese bagels
Ingredients
- 200 g rolled oats gluten-free
- 2 tsp baking powder
- 1/2 tsp salt
- 300 g cottage cheese
- 1 egg
- Beaten egg, for brushing
- Sesame seeds, poppy seeds or similar (optional)
Method
- Blitz the oats in a blender to a fine flour and tip it into a bowl with the baking powder and salt.
- Blend the cottage cheese with the egg to a smooth cream as well, and stir it into the dry ingredients in the bowl.
- Start by stirring with a dough scraper until you have a crumbly but still cohesive dough, then tip it out onto the worktop and knead it together quickly and thoroughly with your hands.
- Divide the dough into 4 equal pieces. Roll each piece into a ball, press it lightly flat, make a hole in the middle and shape into bagels. If needed, wet your hands with a little water to make the dough easier to work with.
- Place the bagels on a baking tray lined with baking paper, brush with beaten egg and sprinkle with sesame seeds, poppy seeds or similar if you like.
- Bake in a preheated conventional oven (top and bottom heat) at 200°C for about 20-22 minutes – or until they are golden and baked through.
- Once they have cooled but are still warm, put them in a bag so they stay soft and moist.
