In our house, these focaccia muffins with tomato sauce and mozzarella have already become a huge hit.
They are soft and springy, slightly crisp at the edges (when they have just come out of the oven) – and taste like a little pizza roll.
They are made with a classic focaccia dough baked in a muffin tin – and before they go into the oven, they are topped with a good pizza sauce and mozzarella, pressed gently into the top so it melts down into the bread. That gives a moist surface and a flavour that is very hard to resist.
Don’t use fresh mozzarella – it will release too much liquid.
They are very easy to make and stay soft and springy for several days. You can easily freeze them and take them out again – and they taste wonderful both cold and warm. Our girls polished off the whole tin in under 24 hours – so do make a double batch if you want them to last more than a day.
Perfect in a lunchbox, as a snack between meals, or as a little something on the side with salads, soups and everything in between.
A new everyday favourite that tastes like the weekend – every day.
Focaccia muffins with tomato and cheese
Ingredients
- 400 ml lukewarm water
- 25 g fresh yeast
- 50 ml olive oil
- 500 g flour – ideally manitoba, pizza flour or tipo 00
- 1 tsp salt
- 200 g pizza sauce – click here for the recipe
- 180 g firm (low-moisture) mozzarella, grated or diced
- Olive oil
Method
- Dissolve the yeast in the water, then add the oil.
- Mix the flour and salt and stir it in a little at a time, then knead the dough, ideally in a stand mixer, until it comes away from the sides of the bowl. This takes anywhere from 8-15 minutes – depending on how powerful your mixer is.The dough should be slightly runny and sticky, but should still come away from the sides.
- Rub your hands with a little olive oil, lift out the dough and shape it into a ball. Return the dough to the bowl, cover and leave to rise in a warm place for about an hour.
- Brush the holes of the muffin tin with oil.
- Divide the dough into 12 equal pieces, shape each piece into a small ball and place them in the oiled holes. Cover with a damp tea towel and leave to prove for 30 to 45 minutes. If the dough is very soft, you can simply use a spoon to scoop up dollops of dough and place them in the muffin tin.
- Spoon a generous tablespoon of tomato sauce over each roll and sprinkle with mozzarella. Now press dimples into the dough with your fingers so the dough forms bubbles and the topping sinks slightly into the surface.
- Bake the rolls in a preheated conventional oven (top and bottom heat) at 230°C for about 18-20 minutes – or until golden and baked through.
- As soon as the tin comes out of the oven, use 2 forks to gather the cheese and sauce back around the rolls. A lot of the cheese and pizza sauce will have melted together across the top of the tin – simply divide it between the rolls. (See the video above the recipe if needed)Leave them to cool slightly in the tin before removing.
- Store them in an airtight bag, and warm them before serving if you like. Focaccia muffins can also be frozen.
Warm wishes, Dianna
