Overnight oats a la Den du ved nok – køleskabsgrød med kaffe og kakao

Overnight oats à la Den du ved nok

Overnight oats à la Den du ved nok – the classic Danish coffee and coconut cake turned into overnight oats with cocoa, coconut and coffee.

If you love Den du ved nok cake, I think you’ll love these overnight oats too. They bring together all the wonderful flavours of the classic cake in an easy, filling breakfast with cocoa, coconut and a hint of espresso.

Everything is stirred together the night before – rolled oats, chia seeds, desiccated coconut, cocoa, vanilla skyr, milk and espresso – and then left in the fridge overnight to soak and thicken. The espresso adds a pleasant depth of flavour without the coffee taking over. I use 25 ml of espresso myself, but you can easily adjust it the next day if you’d like a little more coffee flavour.

The next morning, simply give the oats a good stir; the consistency is easy to adjust with a splash more milk or skyr. Serve them as they are, or top with a little extra vanilla skyr, coconut flakes or perhaps a dusting of cocoa.

A really delicious twist on classic overnight oats that is both properly filling and feels like a bit of a breakfast treat.

Method

  • Combine the oats, chia seeds, desiccated coconut, cocoa powder, vanilla sugar, salt, syrup, milk, skyr and espresso in a bowl. Stir well, cover with a lid and chill in the fridge for at least 2-3 hours, preferably overnight.
You can also mix the ingredients in 2-3 serving jars with lids. Make sure there is enough room for toppings when serving. They are easy to take with you on the go, or to grab from the fridge in the morning or for a quick lunch.
  • Before serving, give the oats a good stir. Adjust the consistency with a little more milk or skyr if you find they have become too thick.
*If you used plain yoghurt, you can also add a little extra vanilla sugar to taste.
  • If you like, top the oats with a little extra vanilla skyr and coconut flakes.
