Classic Danish meatballs in curry sauce (boller i karry), served with fibre-rich cauliflower rice – a great alternative to plain white rice.
Cauliflower rice is easy to make yourself, and it goes perfectly with a plate of boller i karry.
In our house we’re rather keen on cauliflower rice – or at least the adults are.
The first time I heard the words cauliflower rice, I honestly thought: ugh, that’s not for me. But it turns out to taste surprisingly good.
I know many of you are probably thinking: that sulphury cabbage taste, boring, or no flavour at all – and it is none of those things. For one, the curry sauce you pour over it adds plenty of flavour; I wouldn’t fancy eating it on its own either. Beyond that, a really good tip is to pour boiling stock over it rather than just boiling water – it gives the cauliflower rice a lovely flavour. Make sure the cauliflower rice still has some bite, so it doesn’t turn to mush 😉

Hvornår skal der tilføjes gurkemeje?
Hej Lisa
Åhh det er tilføjet nu, – det er blot samme tid de andre krydderier 🙂
