Pointed cabbage salad, coleslaw-style – with mango, apple and a light, creamy dressing.
If you are looking for a fresh, creamy and genuinely flavourful salad to serve with barbecued food, try this pointed cabbage salad with mango and apple. Crisp pointed cabbage (also sold as sweetheart or hispi cabbage) is joined by sweet, juicy mango, crunchy apple and mild spring onions, which together give a lovely balance of sweetness, acidity and plenty of freshness.
Everything is tossed in a light, creamy dressing made with crème fraîche, a little mayonnaise, lemon, honey and Dijon mustard. I like to use a lower-fat crème fraîche (9% fat), as it gives a slightly thinner consistency that coats the salad perfectly without weighing it down. The result is a dressing that brings it all together while still letting the fresh ingredients shine through.
The salad is very easy to make and goes with everything from grilled chicken and juicy steaks to pork chops, barbecued sausages or a piece of grilled salmon. It is a little like a classic coleslaw – just in a lighter, fresher and more summery version. A salad that is sure to become a favourite on the summer table.
If you would like a little extra variety and some crunch, top the salad with roughly chopped pistachios, salted almonds or walnuts. They add a pleasing texture and go really well with the fresh combination of pointed cabbage, mango and apple. That said, the salad is every bit as good just as it is – simple, fresh and full of flavour.

- 1 tsp honey
- 1 tsp Dijon mustard
- Salt and freshly ground pepper
Method
- Mix the dressing ingredients and season to taste with salt and freshly ground pepper – adding a little more lemon or honey if needed.
- Cut the mango cheeks away from the stone, remove the skin and halve the pieces – then cut the mango crossways into thin slices.
- Cut the apple into quarters and then into thin slices.
- Put the pointed cabbage, mango, apple and spring onions in a bowl and toss well with the dressing. If you like, scatter a little extra spring onion over the top before serving.
