Creamy orzo with chorizo and mushrooms is a lovely dish that pairs intense flavour with a rich, creamy texture. Orzo, a rice-shaped pasta, is perfect for this kind of dish where everything is cooked in a single pan – a one-pot orzo, or a one-pot pasta if you like.
This recipe brings the flavour of the spicy chorizo together with the juicy mushrooms, and the dish is finished with white wine, Parmesan and cream, which give it a luxurious, full-flavoured creaminess.
It is a dish that is as quick and easy to make as it is good to eat – perfect for busy weeknights or a cosy evening with comfort food on the menu.
The orzo absorbs all the flavours as it cooks, which makes this dish extra rich and intense. Serve it as it is, or top it with a little extra Parmesan and freshly chopped parsley for a lovely finish.
Creamy orzo with chorizo and mushrooms
Ingredients
- 250 g mushrooms, sliced
- 25 g butter
- 1 shallot, finely chopped
- 4 cloves garlic, finely chopped
- 180 g chorizo, cut into small dice
- 100 ml white wine
- 400 g orzo
- 800 ml chicken stock
- 100 ml cream whipping cream (38% fat) works well
- 70 g Parmesan, finely grated
- 1 handful parsley, finely chopped
- Oil
- Salt and freshly ground pepper
Method
- Heat a splash of oil in a large, deep frying pan and fry the mushrooms until golden.
- Add the butter and let it melt, then add the shallot, garlic and chorizo. Fry for about 5 minutes more, or until the shallot is soft and translucent and the chorizo is lightly golden. Season with freshly ground pepper.
- Pour in the white wine and let it reduce, then add the orzo and the stock. Let the orzo simmer until tender – add a little more stock if needed.
- Stir in the cream, Parmesan and parsley and heat the dish through thoroughly.
- Season to taste with salt and freshly ground pepper before serving.

Hejsa
