Cold potato salad with asparagus and radishes – a fresh summer salad with seasonal vegetables.
This cold potato salad tastes of summer at its very best. New potatoes, crisp asparagus, fresh peas, radishes and avocado tossed in a simple vinaigrette of lemon, honey and Dijon mustard, with plenty of fresh herbs. A bright, genuinely delicious potato salad that is perfect alongside summer barbecues.
I love the many different textures in this salad. The tender potatoes, the crisp vegetables, the creamy avocado and the fresh vinaigrette together make a salad that feels light and satisfying at once, and full of flavour.
If you can get hold of freshly podded peas while they are in season, I warmly recommend using them. They add a wonderful sweetness and freshness that really lifts the salad.
Serve it as a side with anything from barbecued sausages and chicken to fish or a good piece of meat. And if there are any leftovers, try them on a slice of Danish rye bread (rugbrød) the next day with a little mayonnaise – it is simply wonderful.
A lovely potato salad that captures summer and the best of the season’s produce.
Cold potato salad with asparagus, peas and radishes
Ingredients
- 1 bunch green asparagus
- 600 g small cooked, cooled potatoes, halved
- 150 g peas, ideally freshly podded
- 100 g radishes, thinly sliced
- 1 avocado, cut into large chunks
- 2 small shallots, finely sliced
- 1 handful fresh herbs, e.g. parsley, chives and dill
Vinaigrette
- 3 tbsp olive oil
- 2 tbsp lemon juice
- 1 tsp honey
- 1 1/2 tsp Dijon mustard
- Salt and freshly ground pepper
- Chive flowers, optional
Method
- Pour boiling water over the green asparagus, then rinse under cold water. Snap off the woody ends and cut the rest into a mix of larger and smaller pieces. A variety of sizes looks good in the salad.
- Mix the ingredients for the vinaigrette and season with salt and freshly ground pepper.
- Put the ingredients for the potato salad in a large bowl – potatoes, asparagus, peas, radishes, avocado, shallots and herbs. Pour over the vinaigrette and toss well to combine.
- Season to taste with salt and freshly ground pepper and, if you like, scatter chive flowers over the top.
