An easy main-course salad with noodles, chicken and goma dressing. Simple and satisfying, with notes of Asian cuisine.
I love main-course salads, and I love Asian food. Both rice and noodles work perfectly in Asian-inspired salads – they make the meal properly filling and taste wonderful.
This green bowl is kept very simple: cold cooked noodles topped with fresh vegetables, pan-fried chicken and my homemade goma dressing. You will find a link to the recipe in the ingredient list below.
Use whichever vegetables you prefer or have to hand – this version is simply meant as inspiration.
I can recommend grated carrot, sugar snap peas, broccoli or broccolini in small florets, cauliflower in small florets, lamb’s lettuce and the like. But it is really entirely up to you.
Noodles with chicken and goma dressing are mild in flavour, with a lovely creamy finish. I like to toss the cold noodles with a little sesame oil – it gives them a good flavour and makes them a little more slippery and glossy.
If you have no sesame oil, simply leave it out – it is by no means a must.
Homemade goma dressing
Promise me you will try my recipe for homemade goma dressing. It tastes simply wonderful and takes no time at all to make.
It is delicious on top of poke bowls, noodle salads and the like – but also as a dip for all kinds of meat and vegetables.
And it is roughly a million times better than the ones you can buy in the supermarket.
An absolute must-try if you love Asian food.
