Crisp croquettes filled with braised lamb and potato – a lovely little appetiser.
We made these croquettes the day after we had pasta with braised lamb.
We had a good-sized piece of braised lamb left over that was far too good to waste, and it turned into this delicious appetiser.
We served the croquettes with a little tarragon mayo, and it tasted really good.
You can of course use any piece of braised meat; the important thing is that it is braised and well shredded.
