A really good pizza baked with plenty of mozzarella, beef fillet and a marinade of sun-dried tomatoes, garlic, parmesan and parsley, among other things. Full of flavour, and simple to make.
The marinade I use here is one I come back to again and again, – for pasta salads, potato salads, warm bean salad and more. It is packed with flavour and takes no time to throw together.
You can of course use other cuts than beef fillet, – use whatever you have to hand. Leftover cooked steak works well too, or you can cook the meat before it goes on the pizza if you prefer – it does, however, cook through perfectly well in the oven.
You can also make your own pizza sauce as described in the recipe, or buy a ready-made one from the supermarket, – there are plenty of good options available.
Beef fillet pizza with sun-dried tomato marinade
Ingredients
- 1 portion pizza dough – click here
- 375 g grated mozzarella – or 3-4 balls of fresh mozzarella
- 300 g fresh beef fillet, – cut into strips (or other beef, – cooked beforehand if preferred)
- 1 portion pizza sauce – click here
Marinade
- 150 g sun-dried tomatoes (drained weight)
- 50 ml oil – ideally from the jar of sun-dried tomatoes
- 80 g parmesan, grated
- 1 handful parsley, finely chopped
- 5-6 sprigs basil
- Salt and pepper
Method
Pizza
- Mix the ingredients for the marinade and season to taste with salt and pepper.
- Turn the meat in the marinade and leave it to marinate while you roll out the bases.
- Divide the dough into 4 and roll out into thin rounds approx. 30 cm in diameter.
- Spread the bases with pizza sauce and scatter the mozzarella over them.
- Then distribute the meat and the marinade over the bases, – making sure to drizzle the oil over as well. The beef fillet will cook through in the oven, but if you prefer to sear it first, that works just as well.
- Bake the pizzas until crisp and golden, – in the oven at 250°C for approx. 12-15 min. Keep an eye on them, – ovens vary.
- Finish each pizza with a little freshly ground pepper and, if you like, some finely chopped parsley before serving.
