A wonderfully soft and indulgent banana cake with milk chocolate.
Really easy to bake, – moist and simply so good.
Banana cake is an enduring favourite, – it has a lovely natural sweetness, and topped with milk chocolate it is spot on.
A great cake for the family at the weekend, for a child’s birthday at school or similar occasions.
The cake can easily be baked the day before, – it stays fresh and soft for several days if kept in an airtight container.
Banana cake with chocolate
This traybake banana cake contains 450 g of bananas, – they give the cake the loveliest flavour and plenty of moisture at the same time.
I top my banana cake with milk chocolate buttons, which I let melt over the warm cake, – and then spread out with a spoon. That way you avoid dirtying a bowl for melting the chocolate.
You can just as well top the banana cake with dark chocolate if you prefer, – a 55% works really well too.
I hope you feel like trying my recipe for soft banana cake with chocolate, – you will find the recipe below.
Banana Cake with Milk Chocolate
Ingredients
- 5 eggs
- 300 g sugar – I use half white/half cane sugar
- 250 g plain flour
- 2 tsp baking powder
- 2 tsp vanilla sugar
- 1 pinch salt
- 200 g butter
- 4 large bananas, mashed – approx. 450 g
Toppings
- 150 g milk chocolate, buttons or roughly chopped
Method
- Melt the butter over a low heat and turn off the hob.
- Whisk the eggs and sugar with a hand mixer until pale, thick and fluffy.
- Mix the remaining dry ingredients in a bowl.
- Whisk half of the dry ingredients into the egg mixture.*I just use a balloon whisk.
- Then add the butter and whisk it well into the batter, followed by the second half of the dry ingredients. Whisk until the batter is free of lumps.
- Add the mashed bananas and whisk or fold them thoroughly into the batter.
- Line a traybake tin with baking parchment, or grease it, and pour the batter in.
- Bake the banana cake in a preheated conventional oven (top and bottom heat) at 180°C for approx. 30-35 minutes.
- Take the cake out of the oven and immediately scatter the chocolate over it. Let it melt, then spread it out with the back of a spoon.
- Let the cake cool at room temperature before serving. The cake is best stored at room temperature, – in an airtight container or bag.
