Krydret græskarsuppe – Opskrift på cremet hokkaidosuppe

Spiced pumpkin soup – Hokkaido pumpkin soup

Spiced pumpkin soup – a creamy, warming autumn soup made with Hokkaido pumpkin.

Nothing says autumn and hygge quite like a steaming bowl of soup.
And my spiced pumpkin soup is one of the best ways I know to make a soup that is warming and filling, yet simple. It is creamy and velvety, with a pleasant kick from cayenne and chilli flakes that gives it depth and heat – without becoming too hot.

The soup is easy to make and calls for only a handful of ingredients. The pumpkin is simmered until tender with potato, garlic, ginger and onion – and, of course, warm spices – then blended until silky smooth and finished with a splash of cream, which makes it extra creamy and rich.
The result is a soup that warms you right through, and one that works just as well for a weeknight dinner as for guests or as a cosy starter on an autumn menu

Why pumpkin soup is an autumn classic

Pumpkin is one of the most popular ingredients of the autumn and winter season – and with good reason. It is naturally sweet, gives a beautiful golden colour and lends itself to everything from mild to spicy dishes. A spiced pumpkin soup is perfect when you want a soup that is both filling and warming, while also being healthy and full of flavour.

This version with chilli and cayenne stands slightly apart from the classic, milder versions, as it has extra heat and depth. That makes it an obvious choice on cold days when you need a boost of both warmth and energy.
But you can of course dial the heat up or down to suit your own taste.

Method

  • Wash the hokkaido pumpkin well, remove the seeds and cut it into smaller pieces. I use the skin too.
  • Heat a little oil in a saucepan and sauté the onion, garlic and ginger for a couple of minutes.
  • Add the pumpkin and potatoes along with the spices – except the cayenne – and heat through for a couple of minutes.
  • Add the vegetable stock and let the soup simmer for about 20 minutes, or until the vegetables are completely tender.
  • Add the cream and blend the soup until smooth. Season to taste with lemon juice, salt and freshly ground pepper, and adjust the heat with cayenne pepper if you like.
You can also add extra stock if you prefer a thinner soup.
  • Serve with, for example, ice-cold crème fraîche, bacon or roasted chickpeas.

Tips

This pumpkin soup can just as easily be made with butternut squash – the warm spices work perfectly with both.

Super lækker og nem suppe. Havde kun nogle kogte kartofler men det smagte alligevel rigtig godt.

    • Hej Benedikte

Mange tak for opskriften 😉

    • Hejsa

      Rigtig dejlig dag 🙂

      Warm wishes, Dianna
