Overnight oats with vanilla and fresh berries, – easy, filling and a really good meal to start the day with. Top them with plenty of fresh berries and some roughly chopped almonds, – mmm.
Overnight oats taste wonderful, – they are very easy to make, and as the name says – you put them in the fridge in the evening and breakfast is ready the next morning.
Overnight oats are soft and creamy, – and you can top them with exactly what you like.
Also perfect as breakfast or lunch on the go.
Inspiration for your overnight oats
I always use jumbo oats for my overnight oats, – they give the porridge a good consistency and texture. Personally I find that fine porridge oats go too soft and mushy, – but do as you prefer.
You can eat your overnight oats after a couple of hours in the fridge, but ideally leave them overnight.
Overnight oats keep in the fridge for 4-5 days if all the ingredients are fresh. I prefer to make no more than 2 days’ worth at a time, though.

Overnight oats with vanilla and fresh berries
Ingredients
- 250 ml jumbo oats (fine porridge oats can also be used)
- 2 tbsp chia seeds
- 250 ml milk
- 100 ml Greek yogurt, skyr or similar
- 2 tbsp maple syrup, honey or similar
- 2 tsp vanilla sugar
- 1 pinch salt
Toppings
- Almonds, – roughly chopped
- Fresh berries, cut into smaller pieces
Method
- Combine the oats, chia seeds, vanilla sugar, salt, maple syrup or honey, yogurt and milk in a bowl and stir well. Put a lid on and chill in the fridge for at least 2-3 hours, – but preferably overnight. You can also mix the ingredients in 2 serving jars with lids, – make sure there is enough room for the topping the next day. That makes it easy to take with you on the go, or simply to grab a jar in the morning or for a quick lunch.
- Before serving, top your overnight oats with plenty of fresh berries and chopped almonds.
Worth knowing about overnight oats
- Overnight oats keep for 4-5 days in the fridge, – if all the ingredients are fresh.Personally I think they are best within the first 2 days, – and since they are so easy to make, I never make more than 2 days’ worth at a time.
- I recommend using jumbo oats, – they give the porridge a really good consistency and texture. Fine porridge oats can, for my taste, turn a little too mushy, – but of course that is a matter of personal preference.
