Ingredients
250mljumbo oats (fine porridge oats can also be used)
2tbspchia seeds
250mlmilk
100mlGreek yogurt, skyr or similar
2tbspmaple syrup, honey or similar
2tspvanilla sugar
1pinchsalt
Topping
Almonds, - roughly chopped
Fresh berries, cut into smaller pieces
Instructions
Combine the oats, chia seeds, vanilla sugar, salt, maple syrup or honey, yogurt and milk in a bowl and stir well. Put a lid on and chill in the fridge for at least 2-3 hours, – but preferably overnight. You can also mix the ingredients in 2 serving jars with lids, – make sure there is enough room for the topping the next day. That makes it easy to take with you on the go, or simply to grab a jar in the morning or for a quick lunch.
Before serving, top your overnight oats with plenty of fresh berries and chopped almonds.
Worth knowing about overnight oats
Overnight oats keep for 4-5 days in the fridge, – if all the ingredients are fresh.Personally I think they are best within the first 2 days, – and since they are so easy to make, I never make more than 2 days' worth at a time.
I recommend using jumbo oats, – they give the porridge a really good consistency and texture. Fine porridge oats can, for my taste, turn a little too mushy, – but of course that is a matter of personal preference.
