Easy blackberry compote – perfect with cakes and desserts, spooned over cold porridge, served with cheese and more.
Blackberry compote is incredibly easy to make and calls for only a handful of ingredients.
It keeps well in the fridge – just make sure the jar has been sterilised with boiling water and/or rinsed with Atamon (a Danish liquid preservative).
Our driveway is overrun with blackberry bushes – so many that it is impossible to get to all the berries. But every year when August comes around, the freezer gets filled up with freshly picked blackberries from the garden.
Blackberry compote
Ingredients
- 500 g blackberries
- 200 g granulated sugar
- 1 vanilla pod, seeds scraped out and the empty pod kept
- A splash of water (optional)
Method
- Put the blackberries, sugar, vanilla seeds and the empty vanilla pod in a small saucepan, and add a couple of tablespoons of cold water if needed.
- Bring the contents of the pan to the boil, stirring as you go.
- Once the compote is boiling, turn the heat down to medium – and let the compote simmer for about 20 minutes. You should be able to see the liquid thickening – if not, turn the heat up slightly.
- Pour the blackberry compote into a sterilised jar and keep it in the fridge until you are ready to serve.*Blackberry compote thickens as it cools. If you haven’t reduced it enough, you can simply pour it back into the pan and reduce it a little further. If you have reduced it too much, add a little boiling water to the compote until you have the consistency you want. It should be soft and slightly runny.
