An Asian-inspired tortilla egg wrap with sesame seeds, onion and green pepper.
It is incredibly easy to make, and it tastes wonderful.
Top it with soy sauce and a good mayonnaise (I use Hellmann’s), – and choose a chilli sauce to suit your temperament. You can go for a spicy one, or use sweet chilli sauce.
An Asian-style wrap with fried eggs works for breakfast, lunch and dinner alike. If you serve it for lunch or dinner, I recommend using 3 eggs per wrap and serving a salad or similar alongside. That could be an Asian carrot salad, a Thai beef salad or something along those lines.
Asian-style tortilla egg wrap
Ingredients
- 2 eggs, at room temperature
- 1 medium tortilla wrap
- 1/2 small onion, finely chopped
- 1/4 green pepper, diced
- 1 tbsp sesame seeds
- A pinch of chilli flakes (optional)
- Oil
Toppings
- Soy sauce – about 1 tbsp
- Chilli sauce
- Mayonnaise
- Spring onion, finely sliced
Method
- Heat a frying pan over a medium heat and fry the sesame seeds, onion, pepper and, if using, a pinch of chilli flakes in a little oil for a couple of minutes.
- Crack the eggs into the pan and let the whites set, then break the yolks and press them so they spread out.
- Lay the tortilla on top and press it gently onto the egg so it sticks, then flip it over and fry it on the tortilla side for about 3 minutes.
- Drizzle soy sauce over the egg and top with a little chilli sauce and mayonnaise.*See the video above the recipe.
- Fold the tortilla wrap in half, place it on a plate and top with spring onion.
