Overnight oats with lemon and lemon curd – an easy, fresh and pleasantly filling breakfast or lunch.
Overnight oats are incredibly easy to make; it takes less than 5 minutes to stir everything together, and then it is simply a night in the fridge.
This version with lemon and lemon curd is fresh and bright – a lovely take that tastes of sunshine and summer.
I have topped my overnight oats with homemade lemon curd and a little crunchy granola. You can easily leave out the lemon curd, but it really does add a wonderfully fresh flavour.

Overnight oats with lemon and lemon curd
Ingredients
- 250 ml jumbo rolled oats (fine porridge oats can also be used)
- 2 tbsp chia seeds
- 250 ml milk
- 100 ml Greek yoghurt, skyr or similar
- 2 tbsp maple syrup, honey or similar
- 1/2 lemon, juice and finely grated zest
- 2 tsp vanilla sugar
- 1 pinch salt
Toppings
- Lemon curd – click here for the recipe
- Granola – click here for the recipe
Method
- Combine the oats, chia seeds, vanilla sugar, salt, maple syrup or honey, yoghurt, lemon juice, lemon zest and milk in a bowl and stir well. *You can also mix the ingredients in 2 serving jars with lids – make sure there is enough room for the topping the next day. That makes it easy to take with you on the go, or simply to grab a jar from the fridge in the morning or for a quick lunch.
- Cover with a lid and chill in the fridge for at least 2-3 hours – ideally overnight.
- Before serving, top your overnight oats with a couple of generous tablespoons of lemon curd and a little muesli or granola.
Worth knowing about overnight oats
- Overnight oats keep for 4-5 days in the fridge – provided all the ingredients are fresh.I think they are at their best within the first 2 days – and since they are so easy to make, I never make more than 2 days’ worth at a time.
- I recommend using jumbo rolled oats – they give the oats a really pleasing texture and bite. Fine porridge oats can, for my taste, turn a little too mushy – but that is of course a matter of personal preference.
- You can always stir in a little extra milk or yoghurt if you find the consistency has become too thick after a night in the fridge.
