Juicy chicken coated in crushed cornflakes, – lightly spiced and thoroughly moreish.
Cornflake chicken in the air fryer, – it really doesn’t get much easier than this. The pieces take just 5 minutes to prepare, and then they simply go into the air fryer for a good 12 minutes.
Use them in a burger, on top of a salad or a poke bowl, in wraps, rice paper rolls or the like.
Cornflake chicken also works as a kind of nuggets, served with a good tartare sauce and crisp chips.
Cornflake chicken in the oven
In the recipe I cook my chicken in the air fryer, – it is so easy and turns out really crisp.
Cornflake chicken can also be cooked in the oven, – same method as for the air fryer, but here the pieces need about 20 minutes at 200°C.
Remember to turn them once along the way, and use plenty of cooking spray.
You can also fry the pieces in oil in a frying pan, – the method is slightly different there. Read on below.
Crisp cornflake chicken in a frying pan
If you would rather pan-fry your cornflake chicken until crisp, you can easily do that.
The method is slightly different from the one described in the recipe, though.
For pan-frying, you first toss the chicken pieces in a little plain flour, – mixed with the spices listed in the recipe.
Then dip them in beaten egg, and finally in the crushed cornflakes.
The chicken is now ready to be fried in a neutral-tasting oil in the pan.
Cornflake chicken in the air fryer
Ingredients
- 400 g chicken breast
- 1-2 eggs
- 130 g cornflakes
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/4 tsp mild chilli powder
- Salt and pepper
- Cooking spray
Method
Crisp cornflake chicken in the air fryer
- Beat the eggs together and set aside.
- Crush the cornflakes in a bag or similar, – they should stay fairly coarse, and mix them with the spices, salt and pepper.
- Slice the chicken breasts horizontally (parallel to the board) into two thinner pieces, – so you get 2 flat fillets from each breast.
- Dip the chicken in the beaten egg, then in the crushed cornflakes.Press the cornflakes firmly onto the chicken by squeezing the pieces gently in your hands.
- Place them in the basket of your air fryer and spray the tops with cooking spray.
- Cook them for about 12 minutes at 200°C.After 6 minutes, turn the pieces, spray the "uncooked" side with cooking spray again, and cook for a further 5-6 minutes.Be aware that air fryers vary a great deal in how they heat, so keep an eye on them along the way. Some air fryers are also meant to be preheated before use, – so do that if yours is one of them.
- Season the chicken with a little salt after cooking if you like, and serve with your favourite dip, on top of a salad, in a poke bowl, a burger or the like.
Warm wishes, Dianna
