Spring means wild garlic, and what better way to preserve that wild, wonderful flavour than by making your own wild garlic oil?
With its intense, distinctly garlicky aroma, wild garlic is not only a treat for the senses but also a sign that nature has woken up again. My recipe for homemade wild garlic oil is simple, but the effect is anything but. This oil is a versatile flavouring that can lift just about any dish, from salads to soups and marinades. It is a way of bringing a touch of spring into the kitchen, whatever the season. Step into nature’s own larder and work a little magic with wild garlic. This recipe guides you step by step, so you can add a wild, aromatic dimension to your own cooking.
Homemade wild garlic oil
Ingredients
- 50 g wild garlic
- 200 ml neutral-flavoured oil
- Salt
Method
- Rinse the wild garlic thoroughly and dry it well.
- Heat the oil to about 60°C.
- Put the wild garlic in a blender, add a little salt and pour the oil over it. Blend for about 5 minutes, or until the oil has turned a deep dark green. It takes a little time – but it will get there.
- Strain the oil through a fine-mesh sieve and pour it into a sterilised jar or bottle. If you want the oil extra clear, you can pass it through a coffee filter or a piece of muslin.Store it in the fridge.
- TIP: You can use the "pulp" for a pesto, mix it with mayonnaise for a sandwich, or similar.
Olien kan holde sig i lang tid. nemt 5-6 mdr
