These pulled chicken croissants are a real treat when you are craving something indulgent, gooey and full of flavour.
The croissant dough is simply separated along its pre-cut lines into triangles and filled with leftover juicy pulled chicken mixed with creamy savoury spiced cream cheese (pikantost), jalapeño and melting cheddar – a combination that guarantees plenty of flavour and substance.
They are perfect as a quick bite between meals, a snack or an easy lunch, for example served with a fresh salad on the side.
Pulled chicken croissants also pack easily into a lunchbox and are good eaten cold – a sure winner with grown-ups and children alike.
Pulled chicken croissants
Ingredients
- 1 tin croissant dough – I used Danerolles (Jus-Rol in the UK is similar)
- 130 g pulled chicken – click here for the recipe
- 50 g cheddar, grated
- 2 tbsp savoury spiced cream cheese (pikantost)
- 1 fresh jalapeño, finely chopped
- Salt and freshly ground pepper
- Milk or beaten egg, for brushing
Method
- Mix the chicken with the cheddar, cream cheese and jalapeño, and season with salt and freshly ground pepper.
- Unroll the dough and separate it along the perforated lines into the pre-cut triangles.
- Place a generous spoonful of filling at the wide end, pressing the filling together a little, then roll the dough up into a croissant. You may find it helps to stretch the wide end slightly so you can wrap the dough around the filling. Make sure the seam is underneath and pinch the ends lightly together.(See the video above the recipe if you like.)
- Place the croissants on a baking tray lined with baking parchment, brush with milk or beaten egg and bake in a preheated conventional oven (top and bottom heat) at 200°C for about 15-18 minutes.
- Let them cool slightly before serving.
