Whipped cottage cheese is something of a game changer.
When you whip cottage cheese – in a mini chopper or food processor – it takes on a completely new texture. Not just creamy, but light, smooth and silky. After just 4-5 minutes you have the most delicious cottage cheese cream, just asking to be spread in a thick layer on your favourite bread.
Here, the whipped cottage cheese goes on toast and is topped with honey-roasted tomatoes with a little touch of chilli. Sweetness, heat, umami and creaminess in a single bite – it tastes unbelievably good and is one of those combinations you never forget.
It works perfectly as a lunch, for brunch or breakfast – but you can also serve it as a starter:
Make small bites on toast or crostini, or spread the cream on a small plate, top with the tomatoes and serve with good bread on the side.
Tips for the recipe
- Ideally use cottage cheese with 4% fat – it gives the creamiest, most luxurious texture.
- Whip the cottage cheese until it is completely free of lumps. Scrape down the sides as you go for an even result.
- Top with a little rocket – it adds freshness and a slightly bitter twist
- For a sweeter version, swap the tomatoes for honey-roasted peaches or apricots – wonderful for brunch or as a snack.
What is whipped cottage cheese?
If you have come across the term “whipped cottage cheese”, that is exactly what you are making here – in Danish we call it pisket hytteost. When cottage cheese is whipped for a few minutes, it turns into a creamy, airy cheese that is perfect as a spread, a dip or a base for all sorts of dishes. Whipped cottage cheese is especially popular in the US and the UK, and now it has found its way into my kitchen too – and I’m a fan!
Whipped cottage cheese with honey-roasted tomatoes and toast
Ingredients
- 350 g cherry tomatoes
- 3 tbsp olive oil
- 3 tbsp honey
- 1/2 tsp chilli flakes
- 500 g cottage cheese – preferably 4% fat
- 4 slices white bread
- Fresh basil
- Salt and freshly ground pepper
Method
- Tip the tomatoes into a small dish that can go in the oven or air fryer. Pour over the olive oil, honey and chilli flakes – season with salt and freshly ground pepper and stir to combine.
- Roast the tomatoes in a preheated conventional oven (top and bottom heat) at 200°C for about 15 minutes – or in an air fryer at 190°C for about 8-10 minutes.
- Put the cottage cheese in a mini chopper or food processor and blend until light and creamy – about 4-5 minutes. Scrape down the sides as you go if needed.
- Toast the bread in a toaster, on a griddle pan, or in a frying pan with a little butter.
- Spread a thick layer of the whipped cottage cheese on the toast. Top with the honey-roasted tomatoes and drizzle the juices from the dish over them. Season with freshly ground pepper and garnish with basil.Serve immediately.

Så stor en mængde hytteost vil kræve mange omgang i min lille minihakker? Kan man bruge en stavblender i stedet for minihakker?
Hej Stine

Hej Signe
Tusind tak 🙂
Du kan sagtens piske den dagen i forvejen, den forblive cremet og lækker 🙂

Jeg har adskillige gange lavet denne som forret – dog med pisket ricotta og lavet citronhonning med timianblade. Mums !
