Vegetarian millionbøf – Millionlinser (Danish lentil mince in gravy)

This vegetarian millionbøf is a meat-free take on the Danish classic – millionbøf, minced beef simmered in brown gravy.
Instead of minced beef I use green lentils, which together with carrots and courgette make a rich, filling dish – also known as millionlinser, lentil millionbøf.
The lentils simmer with fresh thyme and bay leaves – Worcestershire sauce is added for plenty of depth and character. A little red wine vinegar at the end rounds out the flavour and keeps it bright.

Serve this vegetarian millionbøf with creamy mashed potatoes, boiled potatoes or rice – and you have a satisfying, filling vegetarian meal the whole family will enjoy.
It is an easy, healthy weeknight dish that can be varied with whatever vegetables you have in, so you can adapt it exactly to your taste.

      Warm wishes, Dianna
