When Mexican meets Italian, magic happens in the kitchen – and that is exactly what happens with these tortilla lasagne rolls! A clever way to use up leftover meat sauce: it is wrapped in soft tortilla wraps and baked in the oven with tomato sauce and plenty of cheese until golden and bubbling.
If you have some leftover mornay or béchamel sauce, do add it – it gives an extra creamy, rich flavour that takes the dish up a notch. You can either put it inside the rolls or spread it over the top before baking.
The filled tortillas are baked in the oven until the cheese on top is golden and bubbling. Serve them with a crisp green salad and enjoy the ultimate comfort food, combining the best of two worlds.
An easy, tasty, weeknight-friendly dish that will no doubt become a favourite at the dinner table.
Make as many as suits your appetite
These tortilla lasagne rolls are so good that it can be hard to stop at one. Some people will happily eat more than one, so make the number that suits your family and the way you eat. If you have big eaters in the house, it is a good idea to make an extra half or a whole one per person – they are also delicious in a packed lunch the next day.
You can also serve the dish with a big, fresh salad. Try topping it with crunchy croutons and a creamy dressing, which add a little crunch and freshness as the perfect contrast to the crisp leaves and the baked, cheesy lasagne rolls.
However you serve them, you are guaranteed a new weeknight favourite.

- 200 g grated mozzarella
- 200 ml tomato sauce passata or a plain tomato pasta sauce
- Salt and freshly ground pepper
- Oregano

Method
- Spread tomato sauce over the centre of a tortilla and sprinkle with cheese.
- Add a couple of large spoonfuls of meat sauce and sprinkle with more cheese.
- Fold the sides in over the filling, then roll or fold the tortillas into parcels sized to fit your ovenproof dish. Repeat until all 4 are made.
- Grease an ovenproof dish with a little oil and arrange the tortilla parcels snugly in it.
- Spray the tops lightly with cooking spray, spread them with a little tomato sauce and sprinkle with the rest of the cheese.
- Season with freshly ground pepper and sprinkle with oregano, then bake in a preheated conventional oven (top and bottom heat) at 200°C for 15 minutes – then turn the oven up to 220°C and bake for a further 5 minutes or so, until golden on top.
- Serve with a fresh, crisp salad on the side.
Er tomatsaucen bare sådan en fra glas
Hej Jette
Du kan sagtens bruge fra glas, eller du kan bruge min opskrift på f.eks. pizzasauce, som er let krydret:)
Warm wishes, Dianna
