Strawberry salad with burrata, pistachios and lime – an easy summer favourite.
This strawberry salad with burrata and pistachios is summer on a plate. A simple, irresistible snack, starter or side for the barbecue – and it is ready in under 10 minutes!
Fresh burrata is torn open and topped with sweet strawberries, unsalted pistachios and plenty of fresh basil leaves and chopped mint. A bright hit of lime zest, a small drizzle of good olive oil and a grind of fresh pepper – and you have a light, creamy salad with sweetness, acidity and crunch.
It is ideal as a sharing snack with a glass of chilled white wine in the sun, but it also works beautifully as a starter, as tapas or as a side for white meat – grilled chicken or pork tenderloin, for example. Serve with freshly baked bread or crisp slices of toasted sourdough – and enjoy it at its very best freshly made, while the burrata is still soft and creamy and the herbs are fresh.
