Spinach risotto – green, creamy and full of flavour.
This spinach risotto is nothing short of magical – a beautiful green, silky in texture and packed with flavour. It is a very simple risotto: the spinach is first wilted briefly in a little butter and then blended into a smooth, creamy purée. That way the spinach keeps both its vivid colour and its fresh flavour.
With the spinach purée ready and waiting, I soften the onion, garlic and rice in good olive oil, add white wine and then stock a little at a time – classic risotto style. Once the rice is al dente, the Parmesan is melted in and finally the spinach purée is stirred through. And there you have the most beautiful green risotto, every bit as good to eat as it is to look at.
You can happily eat it just as it is – creamy, filling and complete in itself. But it also works really well as a side to, say, a piece of chicken, fish or a good steak. The quantities here are for a main course – but if you serve it alongside meat or fish, a portion for 3 people is plenty for 4.
Any leftovers? Do keep them – they can be frozen, or you can turn them into crispy arancini – click here for the recipe, for example.
Så nem og hyggelig at lave. Smagte fantastisk.
Warm wishes, Dianna
Tak for en lækker opskrift. Smagte forrygende.
Kan man gemme resten?
Mvh

Hej Rikke
Dejligt du kunne lige risottoen, – tusind tak for din besked 🙂
Rigtig dejlig dag.
De bedste hilsner

Hvilken slags hvidvin bruger I?
Hej Bettina
Mange hilsner
