‘Nduja pasta with fresh tomatoes and Parmesan – an easy, spicy pasta dish.
If you like quick pasta with plenty of flavour and a little spicy kick, this recipe is a must. It is made with just a few, flavour-packed ingredients – and takes only a quarter of an hour from start to finish.
Sweet, sun-ripened tomatoes are cooked until soft with garlic before they are joined by ‘nduja – the spicy, spreadable Italian salami that melts into the sauce and brings both heat and depth. A splash of white wine ties it all together, and once it has reduced, grated Parmesan and a little pasta water go in to make the sauce creamy and rich. Fresh basil leaves are the finishing touch.
Toss it with al dente pasta and it is ready to serve – either as a simple main course or as a side for fish, chicken, pork or beef. Perfect when you want to treat yourself or your guests without spending hours in the kitchen.
Spicy ‘nduja pasta with fresh tomatoes

- 500 g good ripe tomatoes, cut into small pieces
- 5 cloves garlic, roughly chopped
- 500 g pasta
- 4 tbsp ‘nduja
- 150 ml white wine
- 100 g Parmesan, finely grated
- 1 pot basil, leaves picked
- Pasta water
- Olive oil
- Salt and freshly ground pepper
Method
- Heat a frying pan with a good glug of olive oil and fry the tomatoes and garlic for 5-6 minutes over a good, steady heat. Season with salt and freshly ground pepper.
- Meanwhile, cook the pasta until al dente according to the packet instructions.
- When the tomatoes are nice and soft, add the ‘nduja and fry for a couple of minutes before pouring in the white wine and letting it reduce for 3-4 minutes.
- Then stir in the Parmesan until it melts and add a little pasta water to loosen the sauce slightly.
- Fold the basil leaves into the sauce, then stir in the pasta.
- Adjust the consistency with pasta water and season to taste with salt and freshly ground pepper.
Kan den laves dagen før?
Hej Titti
Warm wishes, Dianna
