The kitchen at Restaurant Sletten is classically grounded, with clear references to French cuisine – but with a focus on seasonal Danish produce.
The menu changes regularly, and that is part of its strength.
Snacks
We almost always start with snacks.
Small, elegant servings – often with fish and shellfish, crisp elements and sharp, acidic notes. This is where the level is set from the very start.
Starters
Examples of dishes:
Beef tartare – classic, well balanced and with plenty of depth
Lightly cooked fish with butter-based sauces
Shellfish with a focus on freshness and simplicity
Main courses
Pan-roasted white fish – crisp on the outside and perfectly cooked
Beef or veal with rich, reduced sauces
Seasonal vegetables – simple, but precise
Signature dish
Fish soup – rich, creamy and full of flavour
A place I go for inspiration
Part of what makes Sletten so special to me is that it is also a place I go to be inspired.
It is not only a restaurant.
It is also a place where I sit and think:
“That one – I have to try making that at home.”
It might be a sauce, a technique, a combination of flavours.
It is the kind of cooking where many of the elements can actually be taken home and used in a perfectly ordinary kitchen – for a lovely Saturday dinner or a good lunch.
And that is a real joy.
The desserts – and the one you MUST choose
The dessert menu is really strong.
And there is one you must not miss:
Sea buckthorn surprise
Lightly torched meringue, ice cream inside and a chocolate base.
Sharp, sweet, crisp and creamy all at once.
It is spot on.
