A creamy potato salad with plenty of fresh herbs – simple, and quite simply delicious. A lovely potato salad recipe that goes perfectly with summer barbecues, chicken or a plate of classic Danish meatballs (frikadeller).
I usually use chives and parsley, but do try dill, chervil or similar as well.
This herby potato salad is also seasoned with a few spices, pickled gherkins and Dijon mustard. It is creamy, rich and very good indeed.
The potato salad can be served straight away, or kept in the fridge until needed. Take it out about 15 minutes before it goes on the table.
Potato salad with fresh herbs
Ingredients
- 900 g potatoes
- 300 ml crème fraîche, ideally 18% fat
- 100 ml good-quality mayonnaise
- 1 bunch chives, finely chopped
- 1 handful parsley, finely chopped
- 1-2 pickled gherkins, finely chopped
- 2 tsp Dijon mustard
- 1 tsp sweet paprika
- 1/2 tsp
onion powder
-
Salt and pepper
Method
- Boil the potatoes in their skins in a large pan of well-salted water, with a few parsley stalks if you like, for about 6 minutes. Then take the pan off the heat and leave the potatoes to stand in the cooking water with the lid on for about 15 minutes (depending on size). This gives them a pleasingly firm texture and keeps them from overcooking and falling apart. Test with a skewer that the potatoes are tender before draining.
- Drain the potatoes, rinse them under cold water and leave them to cool, ideally in the fridge.Peel the potatoes and cut them into bite-sized pieces.
- Stir the crème fraîche, mayonnaise, Dijon mustard, chives, parsley, gherkins and spices together in a bowl. Season to taste with salt and pepper.
- Gently fold the potatoes into the dressing and season to taste with salt and pepper.
