Poke bowl with teres major, fresh vegetables and Asian dressings.
Poke bowl with teres major, broccolini and goma – a bowl of warm rice, slices of pink beef, flash-fried broccolini, avocado and crisp cucumber. It is all topped with creamy goma (Japanese sesame dressing) and hoisin or another good Asian sauce. Easy, fresh and really, really good.
I make this poke bowl with pan-fried teres major (also sold as shoulder tender or petite tender), left beautifully pink in the middle. The meat is sliced, and it works wonderfully with the mild rice, the creamy avocado and the crisp broccolini. Teres major has plenty of flavour and a lovely tender texture, so it really is a great cut of beef for this type of bowl.
You can of course use other cuts of beef. Ribeye, flank steak, entrecôte or fillet steak would all be excellent alternatives – the main thing is that the meat is cooked the way you like it, allowed to rest and then cut into thin slices.
I flash-fry the broccolini so it takes on a vivid green colour and a little flavour, but still keeps its crisp bite. And then comes one of my favourites – goma. The creamy sesame dressing is a perfect match for the beef, the vegetables and the rice, and brings plenty of that toasted sesame flavour.
For the base you can use ordinary boiled rice, but I really recommend sushi rice. It has just the right slightly sticky texture for a poke bowl and makes the dish that little bit better. If you use sushi rice, toss it with a little rice vinegar after cooking – it adds freshness and acidity and is really the finishing touch.
I also top the bowl with avocado and cucumber and serve it with hoisin sauce. You can easily use another Asian sauce you like – teriyaki, oyster sauce or a spicy mayo, for example – or simply let the goma do a little more of the work.
The beauty of poke bowls is that they are so easy to vary. Add edamame beans, finely shredded sweetheart cabbage, spring onions, pickled red onions or a little chilli if you have some to hand. A sprinkling of toasted sesame seeds on top certainly does no harm either.
And if you have teres major left over from dinner the night before, this bowl is a brilliant way to use it up. The meat doesn’t even need reheating – just cut it into thin slices and arrange it over the warm rice.
A really easy and seriously good poke bowl with plenty of flavour and lovely textures – soft, crisp, creamy and juicy in the same bowl. Highly recommended.

Ingredients
- 150 g rice – preferably sushi rice *see intro
- 100 g broccolini, trimmed
- 1 avocado, sliced
- 1/2 cucumber, sliced
Teres major
- 350 g teres major
- Clarified butter (or oil) for frying
- Salt
To serve
- Goma dressing – click here for the recipe
- Hoisin sauce or another Asian dressing
- Spring onions, finely sliced
- Sesame seeds – preferably toasted

Method
- Take the meat out of the fridge about half an hour before cooking and trim away any sinew and larger pieces of fat.
- Rinse the rice thoroughly and cook it according to the packet instructions.
- Season the meat generously with salt.

- Wipe the pan clean, heat it with a little oil and fry the broccolini for 2-3 minutes over a high heat. Set aside.
- Divide the rice between two bowls and drizzle with a little hoisin or another Asian sauce, if you like.
- Cut the meat into slices and arrange it on top of the rice. Drizzle with a little more hoisin.
- Arrange the broccolini, avocado and cucumber in the bowls, top with goma dressing and sprinkle with sliced spring onions, toasted sesame seeds and freshly ground pepper.
- Serve straight away, ideally with extra hoisin and goma dressing on the side.
