Quick and easy pointed cabbage salad with rocket and apple – dates, feta and walnuts.
Pointed cabbage salad with apple, dates and feta is one of those salads that is both very simple and genuinely full of flavour. It can honestly be on the table in under 10 minutes – and it still feels fresh, substantial and satisfying. Pointed cabbage is also sold as sweetheart or hispi cabbage.
The crisp pointed cabbage is tossed with rocket, crisp apple, sweet dates and crunchy walnuts. Finally, feta is crumbled over the salad, adding a creamy, salty contrast to the other ingredients. The combination of acidity, sweetness, crunch and creaminess simply works so well.
The salad is tossed in a very simple vinaigrette of olive oil, lemon juice, honey, Dijon mustard, salt and freshly ground pepper. It brings the whole salad together and gives it a fresh, balanced flavour.
It works really well as a light main-course salad for lunch, but it is also perfect as a side for barbecues, roast chicken, fish or salmon.
A lovely, quick salad that suits weeknights and guests equally well.

Virkelig lækker salat. Jeg lavede den uden rucola (havde ikke noget på lager) og selv dagen efter var den lækker og sprød
