My husband was rather sceptical about this pizza when I first presented the idea to him. For one thing he thought it sounded a little dull, and for another he couldn’t quite picture mortadella on a pizza. But I can tell you it went down well — and it has without doubt become a huge favourite in our house.
The flavours complement each other beautifully, and the soft mascarpone gives the topping a wonderfully creamy finish — delicious.
Buy a good wafer-thin sliced mortadella and a good pesto; that is the key to a good result.
