Pasta salad with butter beans and tomatoes – Italian-inspired and ready in no time.
Pasta salad with butter beans and tomatoes is a wonderfully simple and really tasty salad that can be made in just 15 minutes. It is substantial, fresh and full of flavour – perfect as a filling lunch salad or as a side for the barbecue.
The salad is made of cooked pasta tossed with butter beans, juicy tomatoes, rocket and fine rings of shallot. Crumbled feta and fresh basil are added as well, giving the salad a lovely aromatic, summery flavour.
It all comes together with a simple vinaigrette made from olive oil, lemon juice, balsamic vinegar, garlic, dried oregano, dried basil, salt and freshly ground pepper. The combination gives a fresh, slightly tangy dressing that binds the salad together perfectly.
The pasta salad is very quick to make and can easily be prepared well ahead. It will keep in the fridge for several hours until you are ready to serve, and the flavours actually only get better from being left to mingle for a while.
A generous, satisfying salad that tastes of sun and summer – and goes just as well with the barbecue or a roast chicken as it does on its own as an easy meal salad.
