Pasta salad with avocado and crispy Parma ham – an easy main-course salad or side for the barbecue.
Here is a really simple and genuinely good pasta salad with avocado and crispy Parma ham. Perfect as a fresh main-course salad for lunch or dinner – or as a side for chicken, pork, beef patties or a piece of fish, for example.
The salad is cooked pasta tossed with fresh tomatoes, small mozzarella balls, crisp romaine lettuce and creamy avocado. It is dressed in a simple Dijon vinaigrette which, alongside olive oil and lemon, also gets a small spoonful of mayonnaise that makes the dressing extra smooth and rich. Finally the salad is topped with crispy Parma ham and fresh basil leaves, which add crunch, salt and plenty of flavour.
It is a pasta salad that takes very little time to make, and it can be eaten cold in a lunchbox or served as a side with dinner. A new favourite that combines freshness, creaminess and crunch in every bite.
Pasta salad with avocado and crispy Parma ham
Ingredients
- 250 g pasta, dry weight
- 4 slices Parma ham
- 200 g cherry tomatoes, halved
- 1-2 avocados, diced
- 100 g mini mozzarella balls, halved
- 1 small romaine lettuce, shredded
- 4 sprigs basil, leaves picked
Vinaigrette
- 3-4 tbsp olive oil
- 1 1/2 tbsp mayonnaise
- 2 tsp Dijon mustard
- 1-2 cloves garlic, grated or crushed
- 1 1/2 tsp honey
- Salt and freshly ground pepper
Method
- Cook the pasta according to the packet instructions, then rinse it under cold water. Leave it to drain in a sieve.
- Lay the Parma ham on a baking tray lined with baking paper. Spray the top with a little oil – or brush it on if you don’t have a spray – and season with freshly ground pepper if you like.Bake in the middle of a preheated fan oven at 200°C for about 8-10 minutes. Leave to cool slightly before serving.
- Meanwhile, mix the ingredients for the vinaigrette and season to taste with salt and freshly ground pepper.
- Put the pasta, romaine, avocado and half of the tomatoes in a bowl and spoon just over half of the vinaigrette over the top. Toss well.
- Top with the remaining tomatoes and the mozzarella balls – crumble the ham over the top, scatter with the basil leaves and drizzle the rest of the vinaigrette over.
- Season with freshly ground pepper and serve.
