Overnight oats with strawberry purée, fresh strawberries and crunchy granola, – easy, filling and really delicious. I made this batch one day when I had some strawberry purée left over, and it tasted simply wonderful.
Overnight oats with strawberries are fresh with a lovely sweetness, the crunch of the granola is the finishing touch, and they really do taste of sunshine and Danish summer.
Overnight oats taste great, – they are incredibly easy to make, and as the name suggests – you simply put them in the fridge in the evening, and breakfast is ready the next morning.
Overnight oats are a soft, creamy breakfast, – and you can top them with exactly what you prefer.
Also perfect as breakfast on the go, for lunch or as a snack.
Ideas for your overnight oats
I always use jumbo rolled oats for my overnight oats, – they give the porridge a good consistency and texture. Personally I find that fine rolled oats turn too soft and mushy, – but of course it comes down to how you like them.
You can eat your overnight oats after a couple of hours in the fridge, but ideally leave them overnight, – that is when they are at their creamiest and best.
Overnight oats keep in the fridge for 4-5 days if all the ingredients are fresh. I prefer to make only enough for 2 days at a time, though.

Method
Overnight oats
- Combine the oats, chia seeds, vanilla sugar, salt, maple syrup or honey, yogurt and milk in a bowl and stir well. Put the lid on and refrigerate for at least 2-3 hours, – but preferably overnight. You can also mix the ingredients in 2 serving glasses with lids, – just make sure there is enough room for the topping the next day. That makes it easy to take with you on the go, or to simply grab a glass in the morning or for a quick lunch.

- Bring to the boil and let it simmer for about 5 minutes, or until the strawberries are soft.
