Overnight Oats a la æblekage - Sund og cremet køleskabsgrød

Overnight Oats à la Æblekage (Danish Apple Trifle)

Overnight oats à la æblekage – a healthy breakfast that tastes like dessert.

This may well be the best overnight oats I have made to date – a creamy, flavourful and healthier version inspired by classic gammeldags æblekage, the old-fashioned Danish apple trifle.
Perfect for breakfast or a snack, and it is ready in five minutes plus a night in the fridge.

The base is made with rolled oats, chia seeds, vanilla skyr, stewed apple (æblegrød) and milk – and flavoured with cinnamon, a little syrup or honey and extra vanilla sugar if needed. I recommend using vanilla skyr, both for the flavour and for the creamy texture – but you can easily use natural yoghurt instead, as long as you taste and adjust well, perhaps just before serving.

After a night in the fridge the oats are ready – I give them a quick stir, adjust the consistency with a little extra skyr or milk if needed, and top with more vanilla skyr, stewed apple and some crunchy granola. That gives you a breakfast that is filling, tastes wonderful and feels like a little treat 🫶🏼

And no, it is not a real gammeldags æblekage – but as a healthier and genuinely delicious version for breakfast or mid-morning, it is spot on.
You can easily prepare it for several days ahead – if all the ingredients are fresh, it keeps well for 4-5 days in the fridge. I often make enough for two days at a time – I find that gives the best and freshest result.

A quick tip about the stewed apple

You can easily use ready-made stewed apple or apple sauce in this recipe – it makes things quick and easy, especially when you are short of time.

But if you have a little extra time, I really recommend making it yourself. I have a lovely recipe for homemade stewed apple, which you will find right here LINK TO RECIPE – it is easy to make, tastes wonderful and freezes well in small portions, so you always have some ready in the freezer.

Method

Overnight oats à la æblekage

  • Combine the oats, chia seeds, vanilla sugar, cinnamon, salt, syrup, milk, skyr and stewed apple in a bowl. Stir well, cover with a lid and chill in the fridge for at least 2-3 hours, preferably overnight.
You can also mix the ingredients in 2-3 serving jars with lids. Make sure there is enough room for the toppings when serving. It is easy to take with you on the go, or simply to grab a jar in the morning or for a quick lunch.
  • Before serving, give the oats a stir. Adjust the consistency with more milk or yoghurt if you find they have set too firm.
*If you have used plain yoghurt, you can also add extra vanilla sugar to taste.
  • Top the oats with extra vanilla skyr, stewed apple and a generous sprinkling of granola or other crunchy topping.

      Warm wishes, Dianna
