One Pot chicken soup with pasta and sun-dried tomatoes – One Pot Marry Me Soup.
My One Pot chicken soup with pasta and sun-dried tomatoes is inspired by the world-famous Marry Me Chicken – a classic normally made as a creamy pasta dish with chicken, spinach, basil and sun-dried tomatoes in a rich cream sauce.
Here I’ve taken the idea a step further and turned it into a hearty soup that is every bit as flavourful, and proper comfort food.
The soup is packed with tender chicken, pasta, spinach and sun-dried tomatoes, which give it a deep, intense flavour, while fresh basil rounds it off with a touch of freshness. If you want to lift it further and add a fresh twist, you can add 150–200 g fresh tomatoes – fry them along with the onion and garlic, then let them simmer with everything else as the dish cooks.
It is very easy to make, because everything comes together in one pot. Just remember to choose a pasta with a cooking time of over 10 minutes, so the starch can help thicken the soup and give it just the right creamy consistency. Any leftovers can easily be reheated the next day – just add a little extra stock, as the pasta soaks up liquid while the soup sits and cools.

Hej Ingeborg
