An Italian-inspired sandwich with flavour and crunch.
This sandwich is everything there is to love about Italian cooking: simple yet luxurious – and full of love and good ingredients.
Here you get slices of silky mortadella, creamy burrata and homemade pesto, brought together in a handsome sandwich with a satisfying crunch from chopped pistachios.
It is the kind of food that feels indulgently messy and elegant at the same time – and it takes no time at all to make. Use a good, freshly baked bread – ciabatta or a sourdough loaf, for instance – and you have something that tastes like a holiday in Italy.
I like to use this recipe for sandwich rolls – click here for the recipe – and this homemade pesto with rocket – click here for the recipe.
Perfect for lunch or a light dinner
The sandwich is ideal as an extra-special lunch – perhaps on a day off in the sun, for a picnic or as a little touch of luxury in the lunchbox. It also works beautifully as a light evening meal with a crisp salad or some marinated tomatoes on the side.
It takes only a few minutes to make, yet feels like something you would be served at a cosy café in Bologna. And that is what makes it so appealing – it combines easy everyday cooking with a bit of Italian indulgence.
