Marry Me Chicken with pasta – creamy, full of flavour and full of love
Some of my absolute favourite ingredients brought together in one dish – pasta, cream, Parmesan, garlic and sun-dried tomatoes. I love it.
This is the kind of dish where everything just comes together – juicy chicken, a creamy sauce and your favourite pasta. It can’t go wrong.
“Marry Me Chicken” got its name because the dish is so good that it is said to be able to prompt a proposal.
And I understand why – it tastes seriously good. A silky sauce with depth and umami from Parmesan and sun-dried tomatoes, wrapping itself around the pasta and chicken – proper comfort food, the kind where you can’t help going back for one more bite.
You can easily make the dish a little lighter in calories. Use cooking cream (4% fat) and you save around 200 kcal per serving – still creamy and rich, just a little lighter.
Perfect as a weeknight treat, for guests or a cosy date night at home.
Marry Me chicken pasta
Ingredients
- 500 g chicken, cut into large chunks
- 1 onion, finely chopped
- 4 cloves garlic, crushed or grated
- 140 g sun-dried tomatoes, diced
- 150 ml white wine
- 250 ml whipping cream (38% fat) or cooking cream (4% fat) for a lighter version
- 75 g Parmesan, finely grated
- 400 g pasta
- 100 g fresh spinach
- 7-8 sprigs fresh basil, leaves only
- Oil for frying
- Salt and freshly ground pepper
Method
- Heat a frying pan and brown the chicken in a little oil. Season with salt and freshly ground pepper. The chicken will finish cooking in the sauce, so it doesn’t need to be cooked through at this stage.
- Add the onion and garlic and fry until the onion is soft and translucent.
- Add the white wine and the sun-dried tomatoes and let it reduce slightly over a medium heat.
- Add the cream and the Parmesan and let it simmer until the sauce thickens. Meanwhile, cook the pasta until al dente.
- Stir the spinach and basil into the sauce until the spinach wilts – then season the sauce to taste with salt and freshly ground pepper.
Smager helt fantastisk!
