Marmorkage - Opskrift på klassisk marmorkage med appelsin

Marble Cake with Orange

A classic marble cake with a hint of orange – pleasantly sweet, lightly moist and with a dense crumb.
Marble cake is probably one most of us remember from childhood – so pretty when it’s sliced and really easy to make.
The cake keeps best in an airtight container at room temperature. As the crumb is on the dense side, I’d recommend eating the cake within a couple of days – that is clearly when it’s at its best. But then, who has cake sitting around for longer than that anyway?! 😉

Marble Cake with Orange

Recipe for a classic marble cake with a hint of orange. If you’d rather leave out the orange, you can replace the orange juice with milk.
This recipe fits a loaf tin of approx. 26×11 cm and 7 cm deep.

Method

  • Beat the butter and sugar together until light and fluffy.
  • Add the eggs one at a time, beating thoroughly after each one so the mixture doesn’t curdle.
  • Mix the plain flour, vanilla sugar, baking powder and salt, and fold half of it into the mixture.
  • Fold the orange juice and orange zest into the batter, then finish with the remaining dry ingredients (not the cocoa).
  • Transfer about 1/3 of the batter to a separate bowl and fold the cocoa powder into it.
  • Grease a loaf tin thoroughly with butter or neutral-tasting oil, and pour in half of the plain batter.
  • Spread the chocolate batter on top and finish with the remaining plain batter.
  • Using a metal skewer, wooden skewer or similar, draw a pattern through the batter so the colours swirl together slightly.
  • Bake the cake in a preheated conventional oven (top and bottom heat) at 180°C for approx. 42-45 minutes. If in doubt, test with a skewer to check that the cake is baked through in the centre.
  • Let the cake cool completely before removing it from the tin.
