Lovely Swedish saffron buns – lussekatter – known here in Denmark as Luciaboller or Luciabrød.
In Sweden, Lucia buns are a cherished tradition served on St Lucia’s Day – but at our house we happily make them from November onwards and a few more times in the run-up to Christmas, because they taste so good.
Their beautiful colour and characteristic flavour come from saffron, and since it is the very foundation of the bun, I recommend buying good, genuine saffron.
Store the buns at room temperature in an airtight bag; they can easily be warmed through in the oven or microwave and will be just like freshly baked.
They also freeze well if you need them to.
