Grilled pulled chicken sandwich with melted cheese and barbecue sauce.
If you love crisp, golden sandwiches with plenty of melted cheese and a juicy filling, you need to try this grilled pulled chicken sandwich with cheese and barbecue sauce. It is messy, juicy and packed with flavour – exactly as a really good hot sandwich should be.
Here, the spiced pulled chicken is tossed in a frying pan with onion and barbecue sauce, which makes the meat extra juicy and gives it even more flavour. It then goes into good white bread together with two kinds of cheese, which melt together into the creamiest filling. The sandwiches are grilled over a good high heat until the bread is crisp and golden and the cheese has melted. You can use either a panini press or a griddle pan. If you use a griddle pan, it is worth giving the sandwiches a couple of minutes in the oven at the end if the cheese needs a final push to melt completely.
It is the perfect recipe if you have leftover pulled chicken, but you can just as easily use poached chicken breast, pulled apart with two forks and tossed with barbecue sauce, onion and perhaps a few extra spices for even more flavour.
Serve the sandwiches for lunch or as an easy dinner with crispy chips, coleslaw or a fresh, crunchy salad. An easy everyday favourite that is both filling and impressive.
