Gateau Marcel - Opskrift på den lækreste Gateau Marcel

Gateau Marcel

Gateau Marcel – the chocolate cake to end all chocolate cakes. It is intense, creamy and utterly indulgent, and it is genuinely easy to bake.
Gateau Marcel is actually a mousse cake, made from one and the same chocolate mousse throughout. Half of it is baked; the other half stays as a fresh chocolate mousse on top.
The baked chocolate mousse together with the soft chocolate mousse is wonderful through and through, and the cake is best made the day before. A win-win, if you ask me.
Gateau Marcel is a gluten-free chocolate cake, and it calls for only a handful of ingredients.
Serve your Gateau Marcel as a birthday cake, as a New Year’s Eve cake or simply on a day when friends or family drop by – you won’t regret it.

What can I serve with my Gateau Marcel?
You can serve the cake on its own – it is intense, with a deep chocolate flavour, so don’t cut the slices too large.
It also goes beautifully with fresh berries, a raspberry coulis – click here for the recipe, or with marinated orange segments.
You can also add a little orange zest to the chocolate mousse – it tastes wonderful.

Gateau Marcel

Recipe for the most decadent Gateau Marcel – the ultimate chocolate cake with chocolate mousse.
The cake pictured here was made in a 24 cm springform tin; I would recommend using one of about 22 cm, or even 20 cm. Bear in mind that the baking time may then change slightly, so the cake will need 3-5 minutes longer.

Method

  • Melt the butter in a saucepan and stir in the chocolate until it has melted.
*If the mixture is still warm once the chocolate has melted into the butter, leave it to stand until well cooled – without letting it set, of course.
  • Whisk the egg yolks and 150 g of the sugar together until pale, thick and fluffy, then set aside.
  • In another bowl, whisk the egg whites with the remaining 100 g sugar to a light meringue. Whisk thoroughly, until the sugar has dissolved and the meringue is glossy and holds firm, slightly elastic peaks.
  • Fold the cooled chocolate and butter mixture into the whisked egg yolks, then fold the meringue into the mixture in 3-4 additions.
*You want to keep as much air in the mousse as possible, so work gently.
  • Line the base of a springform tin with baking parchment, then grease the base and sides thoroughly with butter and dust with sugar.
*Turn the tin upside down over the sink and tap out the excess sugar.
  • Pour half of the chocolate mousse into the tin and bake in a preheated conventional oven (top and bottom heat) at 175°C for about 35 minutes.
Put the rest of the chocolate mousse in the fridge.
  • Leave the base to cool completely in the tin – in the fridge if you like – then spread the rest of the chocolate mousse over the top.
*The cake will sink in the middle as it cools – it is meant to, so don’t panic 😉
  • Chill the cake again for at least 4 hours, and preferably overnight.
*If you need the cake ready sooner, you can put it in the freezer for a couple of hours instead.
  • Top the cake with cocoa powder or chocolate shavings, then release it from the tin.
*If needed, neaten the edges with a palette knife or similar.

Ville du anbefalede 50-55 % eller kan er 65-70 % også fint? Eller bliver den er bitter

    • Hejsa

  3. Jeg kunne kun få fat i 70% chokolade. Men mon ikke det går an? Mvh Lene

    • Hej Tina

Du får også uge svar her 🙂

      Warm wishes, Dianna

  7. Kan kagen laves to dage i forvejen? 🙂

    Hej Dianna

      Warm wishes, Dianna

  9. Catherine

Hi. Can this be frozen to be eaten at a later date? Thanks

  10. Louise

    Hej Dianna

      Warm wishes, Dianna
