Deliciously gooey Danish rum balls (romkugler) of the truly indulgent kind, made with leftover cake, chocolate and plenty of flavour. Homemade rum balls are remarkably easy to make — just get out the stand mixer; it only takes a few minutes.
I often have leftover cake lying around, and instead of throwing it out, it goes into the freezer until there is enough for a batch of rum balls.
If you don’t have any leftover cake, buy a couple of cakes on offer. Almost anything works: Swiss roll, chocolate cake, citronmåne (Danish lemon sponge cake) and the like.
The rum balls keep well for 3-4-5 days in the fridge in an airtight container.
Also try my recipes for healthier rum balls with dates and chickpeas and date balls with black beans.
