Egg salad – a classic, creamy topping for Danish rye bread (rugbrød) and sandwiches.
Egg salad is a true classic that never goes out of fashion. It is creamy, full of flavour and very easy to make – and it works just as well on the lunch table as in a packed lunch.
This egg salad is made with hard-boiled eggs, mayonnaise, crème fraîche and plenty of fresh chives, which bring a welcome freshness. A good curry powder and a little turmeric add both colour and a mild, spiced flavour that goes really well with the creamy ingredients.
The egg salad is perfect spread on rye bread, but it is also excellent in a sandwich, on a bagel or on a slice of toast. It is a sure hit on the Easter table too – at an Easter lunch, a Whitsun lunch or a Christmas lunch, where it belongs among the classic lunch dishes.
Top it with a little cress, microgreens, chives or finely chopped spring onions for freshness and a touch of green.
A really simple recipe for homemade egg salad – ready in a few minutes.
Danish egg salad
Ingredients
- 8 hard-boiled eggs
- 3 tbsp
mayonnaise, – I use Hellmann’s
- 2 tbsp crème fraîche
- 2 tbsp chives, finely chopped
- 1 tsp
good curry powder
- 1/2 tsp
ground turmeric
-
Salt and pepper
-
Cress, chives or spring onions, to top
Method
- Roughly chop the hard-boiled eggs. If you like, use an egg slicer and cut each egg in two directions: slice it once, then turn the sliced egg a quarter turn and slice it again crosswise.
- Stir the crème fraîche and mayonnaise together, add the curry powder, turmeric, chives and chopped eggs, and season to taste with salt and pepper.
- Top the egg salad with finely chopped chives, spring onions or cress.*Keep the egg salad covered in the fridge until you are ready to serve it.

Kan man erstatte (eller undvære) gurkemeje?
Hej Jan
