Creamy Cajun chicken soup with pasta and vegetables.
This creamy Cajun chicken soup with pasta is weeknight cooking at its very best. An easy, filling and flavourful soup packed with vegetables, pasta and juicy chicken – and one the whole family can get on board with.
It isn’t hot, just well spiced – so adults and children alike can enjoy it.
The soup starts with onion and garlic softened in the pan, before tomato purée and homemade Cajun seasoning join them. Then chopped tomatoes and chicken stock go in, and you let the carrots simmer along for 7-8 minutes until they are starting to soften but still have a little bite. The pasta goes in and is cooked al dente – and then we round it all off with a little cream, for that creamy, soft, lightly thickened consistency that makes the soup so good.
Finally, cooked shredded or sliced chicken (from either a whole chicken or chicken breasts), the diced peppers and freshly grated Parmesan are added. Everything is heated through so the flavours come together while the peppers still keep a little bite.
Before serving, season the soup with Parmesan, salt and freshly ground black pepper, and finish with a little fresh basil on top.
It’s a soup with warmth, body and plenty of flavour – without being heavy or demanding too much time in the kitchen. A dish that’s just as good on a weeknight as at the weekend, and that tastes even better the next day, should there be any leftovers.
