Soft, moist chocolate muffins – very easy to bake, with a lovely texture and a proper chocolate flavour.
They keep fresh for several days in an airtight container at room temperature, though they rarely last that long, not in my house at least.
I always use paper cases in my metal muffin tin, simply because that is what holds the shape best. The batter is fairly runny and can easily spill out of the paper cases if they are too thin.
