Chicken mince in coconut curry sauce with pointed cabbage and carrots

Chicken mince in coconut curry sauce with pointed cabbage and carrots – a creamy, easy weeknight dinner.

This creamy dish of chicken mince in coconut curry sauce is an Asian-inspired take on classic Danish chicken curry – with warm notes of curry, fresh lime and ginger, all brought together with rich coconut milk. An easy, flavourful weeknight dinner that is both filling and a little indulgent.

I love simple dishes made with mince – they always turn out juicy and full of flavour, and they tend to go down well with children. This is a flavourful, nourishing version in which chicken mince is cooked together with finely shredded pointed cabbage (also sold as hispi or sweetheart cabbage) and carrots. The result is a dish with plenty of substance, texture and fibre – without compromising on flavour.

The silky sauce is made with good full-fat coconut milk, which gives it creaminess and depth. If you use a light version, I recommend starting with half the stock so the sauce doesn’t end up too thin. If it is still a little too runny, you can easily thicken it with a little cornflour mixed with water.

A good curry powder is essential to the flavour of this dish. Use an aromatic, full-bodied curry powder of good quality – and remember that you can always taste as you go and adjust the heat to suit.

Serve with rice, cauliflower rice, noodles or courgette spaghetti – it works beautifully whatever you pair it with.

Topping suggestions

  • Fresh coriander or Thai basil
  • Roughly chopped peanuts or cashew nuts
  • Finely grated lime zest or a few drops of lime juice
  • Thin slices of chilli or chilli oil for an extra kick
  • Toasted sesame seeds

      Warm wishes, Dianna

Måske er ingefæren glemt i selve fremgangsmåden?

      Dbh Dianna
