Cabbage soup with chicken, vegetables and curry – healthy, warming and filling comfort food.
This cabbage soup with chicken, vegetables and curry is just what you need when you want something warm and filling that is surprisingly light.
It is a clear soup full of juicy shredded chicken, plenty of vegetables, pointed cabbage and a mild note of curry and dried thyme – simple, but really, really good.
The soup is very easy to make, and the cooking itself is quick – especially if you use leftover chicken.
But precisely because the soup is so simple, it is all the more important that the base has a good, robust flavour. If you have poached a whole chicken, use that stock – it gives a deep, rounded flavour that lifts the whole dish.
If you are using chicken breast or other meat without homemade stock, make a good, strong stock from cubes – for example three stock cubes to about 1.2 litres of water, so the flavour really comes through.
The soup is lightly thickened (with a little flour), which gives it a slightly rounder consistency without making it heavy – and it is packed with good vegetables: potatoes, celeriac, carrots, leek and pointed cabbage.
Low in calories but filling and full of flavour – and perfect for autumn, winter and the weekdays when dinner simply needs to be comforting and easy.
Chicken breast instead of a whole chicken
If you want to save a little time, you can use chicken breast instead of a whole chicken.
Just remember that the flavour of the soup depends on the stock – so build a strong base. For about 1.2 litres of liquid I recommend at least three stock cubes, so you still get the deep, rounded flavour that would otherwise come naturally from a poached chicken.
You will still have a mild, smooth and delicious soup – but the flavour gets that extra lift when the stock is given a little extra attention.
I always poach a whole chicken when I make soups like this one – a soup where the base, the stock, is a large part of the flavour. I put the chicken in a pot, cover it with water and bring it to the boil. I skim the water thoroughly, then add 2-3 stock cubes, whatever leftover vegetables I have to hand and 10 peppercorns. I simmer the chicken over a low heat for about 45 minutes – depending on its size, and then I like to leave it to rest in the liquid for 15-20 minutes before lifting it out.
If there is time, I return the carcass to the pot once the meat has been picked off and let the stock keep simmering. I add extra water if needed, depending on how much stock I will be using.
Cabbage soup with chicken, vegetables and curry

- Add the onion and garlic and cook them in the bacon fat until the onion is soft and translucent.
- Add the curry powder and thyme and let them warm through for a moment before stirring in the flour.
- Add the stock, whisking with a balloon whisk if needed to make sure the flour is fully dissolved.
- Add the potatoes, celeriac and carrots, cover and simmer gently for about 8-10 minutes, or until the vegetables are just tender.
- Add the cabbage and leek, cover and let the soup simmer for about 5-8 minutes more, or until the cabbage has wilted.
- Add the chicken to the pan along with the bacon and parsley, heat the soup through and season to taste with salt and freshly ground pepper.Add a little extra stock if you think the soup needs it.
