Fresh, fruity blackberry syrup simmered down with a little star anise to give it a gentle hint of liquorice.
The blackberry bushes in the garden have simply produced SO many berries this year – I have never seen anything like it – and a great many good things are coming out of them.
This blackberry syrup is wonderful in all sorts of drinks and desserts, in smoothies, over yoghurt and in marinades and salad dressings.
If star anise isn’t for you, simply leave it out – the syrup tastes just as lovely without it.
