Baked pointed cabbage with serrano ham, basil and mozzarella – a delicious pointed cabbage recipe.
Baked pointed cabbage (also sold as hispi or sweetheart cabbage) is one of the easiest and most delicious side dishes you can put on the table. As the cabbage bakes in the oven it turns beautifully tender, while the top takes on plenty of flavour from the wholegrain mustard and Parmesan – and crispness from the serrano ham.
Here the cabbage is brushed with a mixture of wholegrain mustard and olive oil, which gives it lovely flavour without any real heat. The cabbage caramelises lightly as it bakes, and together with the Parmesan, fresh mozzarella, basil and crunchy pistachios you get a really good dish, full of flavour and contrasting textures.
I often serve it as a side with barbecued food, pan-fried salmon or a roast chicken, but it works just as well as a light main course. Serve it with a good piece of bread and a fresh salad on the side and you have a really lovely meal.
A simple recipe with few ingredients that shows beautifully just how good a pointed cabbage can be.
Baked pointed cabbage with mustard, serrano ham and mozzarella
Ingredients
- 1 pointed cabbage also sold as hispi or sweetheart cabbage
- 1 tbsp wholegrain mustard
- 2-3 tbsp olive oil
- 25 g Parmesan, finely grated
- 6 slices serrano ham
- Salt and freshly ground pepper
To serve
- 7 sprigs fresh basil, leaves picked
- 1-2 balls fresh mozzarella
- 25 g pistachios, chopped
Method
- Cut the pointed cabbage into thick slices, about 1 1/2-2 cm thick, and lay the slices close together on a sheet of baking parchment or on a greased baking tray.
- Stir the mustard and olive oil together, season with salt and freshly ground pepper and brush the mixture over the cabbage slices.
- Sprinkle the Parmesan over the top and arrange the serrano ham on top. Season with freshly ground pepper and bake in a preheated conventional oven (top and bottom heat) at 210°C for about 22-25 minutes.
- Leave to cool for a couple of minutes before scattering the basil leaves, torn mozzarella and pistachios over the top.
- Drizzle with a little good olive oil before serving, if you like.
